Who We Are
Who We Are
Soup curry originated in Sapporo, Hokkaido, in the 1970s as a spice-forward alternative to traditional Japanese curry. Shaped by Hokkaido’s cold climate and an emerging spice culture, it was designed to be deeply warming yet light and aromatic.
Unlike classic Japanese curry, which is thickened with a flour-based roux, soup curry is built on a clear, spice-driven broth. Ingredients are prepared separately to preserve their texture and character, while layers of spice deliver aroma, gentle heat, and depth without heaviness.
Our soup curry is made completely from scratch, simmered with vegetables, herbs, and a custom blend of over 25 carefully selected spices. Chef Shohei brings a deep personal connection to curry, having previously owned and operated a spice curry restaurant in Sapporo—an experience that shaped his uncompromising standards and philosophy, reflected in every bowl we serve.
As Seattle’s first dedicated soup curry restaurant, our goal is simple: to bring the true, authentic taste of Sapporo-style soup curry to the people of Seattle.
